VITICULTURE
Traditional hand pruning methods are applied, the fruit is harvested at what is considered to be optimal ripeness and flavour in accordance to terrior, soil type and micro climate.
VINIFICATION
Crushed and de-stemmed into open fermenters, with fermentation temperature controlled at 2 5° C. Must is pumped over twice each day. Free run is removed from skins and the pressings are gently pressed via basket batch press, with free run and pressings reblended prior to molactic fermentation.
MATURATION
14 months in French and American oak hogsheads.
COMMENTS
High quality and consistent yields point towards 2021 being another classic vintage for the Barossa Valley. January and February rainfall events led to fresh canopies, while mild weather conditions throughout summer meant that fruit ripening was gradual, providing time for flavours to fully develop.
The wine is Ruby Plum and Magenta in colour, with a bouquet infused with spearmint, casis blueberry and Monte Carlo biscuit. The palate explodes with abundant ripe mixed berries amongst silky tannins
and bold French oak.
CELLARING
The cellaring potential extends well into the next decade and beyond.
